Summer Salsa Recipe

It’s peak melon season right now, so this is the perfect recipe for a hot summer day. Pick up fresh melon at your local farmers’ market and try this out when you have one that’s nice and ripe. This salsa is so quick and refreshing, and it’s easy to pack for a picnic or backyard gathering. You can scoop it up with chips, top off a salad, serve it with grilled veggies, serve as a side with sorbet or coconut yogurt, or just eat it straight!



Cantaloupe Salsa


Stir together the following items in a large bowl:


1 medium cantaloupe seeded and diced into small chunks

1 medium red pepper finely diced

2 green onions trimmed and thinly sliced

Juice and zest of 1-2 limes

1 handful cilantro leaves chopped

1/2 teaspoon salt

1/4 teaspoon red pepper flakes


This is a very versatile recipe, so it works great with other types of melon such as honeydew or watermelon or even other fruits like pineapple, mango or peaches. Try adding some finely diced jalapeño if you want a little extra kick. You substitute fresh mint or basil for the cilantro and try lemon or orange juice in place of lime juice to create your own personal version.


If you don’t immediately eat the whole bowl, leftover salsa can be stored in the fridge in a sealed container for about three days.
